Here’s what’s for dinner this week!
Burgers and Fries
I haven’t had a burger in over a month in an effort to avoid wheat/gluten and dairy. Because I’m not intolerant, I can actually have it on occasion, I just try my best not to (moderation is a slippery slope for me). After spotting the Simple Truth Natural Burgers at Kroger, I couldn’t resist putting them on the menu this week. Kroger also has some Brioche buns that are super yummy! If I’m gonna stray from my diet, I might as well go all the way! And because we hardly ever go to McDonald’s anymore, I made fast food fries.
Slow Cooker Lemon Garlic Chicken, Asparagus and Red Potatoes
Whole chickens are fairly inexpensive (especially when you get them on sale for $4 like I did this past week!) and make just enough chicken for my family of 7 (although I do not think that will be the case for much longer). I love lemons, garlic, rosemary and red potatoes so much that I keep them on hand (and actually grow rosemary in my herb garden). My 9 year old is always asking when I’m cooking asparagus again, and since she’s having an endoscopy done on Wednesday, I thought I’d make some for her the night before. Crock pot meals are my favorite way to cook dinner. You just throw everything in the pot, turn the knob and then serve from the pot when dinnertime rolls around. You can’t get much easier than that! I doubt my asparagus and potatoes will fit in the crock pot with the chicken, so I’ll probably roast them.
I recently added basil to my herb garden, so I can’t wait to use it for the first time in this simple dish!
I have made cauliflower fried rice before, but it’s been a while. I am such a fan of cauliflower, so I love trying it different ways, like as mashed potatoes, rice or even pizza crust! My family loves anything Asian, so I know I’ll see clean plates on this night.
I bought a bunch of organic red and green lentils a while ago when Aldi had them on special and I have yet to make the effort to use them. That changes this week! A couple weeks ago I made another Indian inspired dish and my family loved it, so I’ve been looking for more of them. This one can be thrown in the crock pot! Bonus!
I love black beans, I love sweet potatoes, and I love chili, but I’ve never put black beans and sweet potatoes into my chili before! I’m excited to try this one!
My kids aren’t the biggest spaghetti sauce fans, but they love meatballs and pasta…and I love spaghetti sauce, so I just keep serving it to them every so often hoping they’ll change their minds. I’ll be substituting gluten-free bread crumbs and spaghetti noodles (the brown rice version looks, tastes and feels just like regular pasta!) when I make this, and I cheated and bought pre-made organic spaghetti sauce as well.
