What’s For Dinner?

Welcome to this week’s meal plan! In each week’s meal plan I’ll share with you what I plan to cook with pictures and links to my inspiration (or recipes similar to the ones I use). Please note that I don’t always follow these recipes, so use them at your own discretion! I will usually make note of the ingredients I use or what I may have done differently when I post my nightly dinner pic on Instagram, Twitter, and Facebook. So be sure to follow me, if you’re interested in seeing how my versions come out!

So here’s what’s for dinner this week:

Since we were on break last week, and super busy, I ended up not cooking all of the meals I planned for. One day, we got stuck out and about before church, so we grabbed some Burger King. Another day, I got stuck at the doctor with my mom, then had to go to a birthday party and then the store to get a gift for another birthday party, so I just grabbed some pizza and wings on the way home. I’m still excited to try this meal. It’s on the menu for tonight!

This healthy, Mediterranean-flavored lentil soup is made with (mostly) pantry ingredients! Vegan and gluten free.:

This is the other meal that didn’t get eaten from last week. The kale still looks good, so it will be next on this week’s menu!

Last week, I made smoked sausage, onions, potatoes and cabbage. It’s one of my favorite dishes, mainly because it’s so darn easy and the kids just love it. This week I thought I’d swap the cabbage out for some peppers. Hey, it meant one less recipe to find! I’m still exhausted from our break…yawn.

I know I probably shouldn’t have two sausage recipes in the same week, but I’ve been dying to try this one! Cabbage is one of my favorite foods!

One-Skillet Mediterranean Chicken Recipe | The Mediterranean Dish. This Greek-inspired chicken dinner comes together in 15 minutes! Four chicken breasts and a few flavor-packed ingredients is all you need!

This combination of chicken, tomatoes, feta, red onion, parsley and black olives sounds fantastic! I think I’ll serve it over lettuce and make it like a Greek salad with chicken!

I have so much chicken in the freezer from my last run to Sprouts. The kids love anything with chicken and/or bacon, so this one is for them.

This is another one for the kids. I guess I’m feeling generous this week, haha!

If you couldn’t already tell, I’m keeping it simple this week. Maybe I’ll feel less exhausted once I’m through taking these antibiotics. The good news is, I should have a fairly cheap grocery bill this week!
