Welcome to this week’s meal plan! In each week’s meal plan I’ll share with you what I plan to cook with pictures and links to my inspiration (or recipes similar to the ones I use). Please note that I don’t always follow these recipes, so use them at your own discretion! I will usually make note of the ingredients I use or what I may have done differently when I post my nightly dinner pic on Instagram, Twitter, and Facebook. So be sure to follow me, if you’re interested in seeing how my versions come out!
So here’s what’s for dinner this week:
Today is my hubby’s 33rd birthday! When asked what he would like to have for dinner, he quickly selected Tater Tot Casserole, which I thought was odd because I can’t remember the last time I made it and I’ve never heard him say he’d like to have it again. Who knew it was such a favorite??? I know the kids love it too, but it’s made with creamed soups, which I’m trying to stay away from. I’m sure there’s a way to make it without them, but I bet it won’t taste the same and I’m not in the mood to try and figure it out this week, so I’ll be making it the way his mom used to make it. I’ll probably buy him a cake too! I know he enjoys my new healthy meals, but I know a part of him misses the crap we used to eat too.
I found a cheap beef roast, lactose-free sour cream and gluten-free egg noodles at Sprouts last week, so I knew I would be making beef and mushrooms with egg noodles this week! Instead of cream of mushroom soup and dry onion soup mix, I saute onions and mushrooms then mix them with sour cream. I’ll cook the beef in the crock pot with a bit of beef broth, then cook the noodles and sauce right before I serve it. I’ve been making this dish for many years. It’s a family favorite!
Ratatouille with Pasta
I just love vegetables. I’ve made ratatouille before, but this time I’m gonna throw some pasta in the mix! This’ll be our vegetarian dish for the week.
My family loves Asian food. I pretty much make an Asian inspired dish every week. This week I decided to spice things up with a new twist on fried rice. I’ve never had ham and pineapple in fried rice, but I like the sound of it!
Cilantro Lime Chicken with Avocado Salsa with Quinoa
I love avocados. I could literally eat them every day, except they upset my stomach when I eat more than a smidge of them. Now I try to limit myself to 1/8th of them in my protein smoothies that I drink after I work out 3 times a week and maybe once a week in a dinner recipe or guac with chips. I’ll be serving this yummy cilantro lime chicken with avocado salsa over quinoa.
BBQ Stuffed Baked Potatoes with Chick-fil-A Recipe Coleslaw
Sprouts also had pork roasts on sale last week. I asked my hubby what he wanted me to make out of it and he quickly said, “BBQ!” He even requested coleslaw, specifically Chick-fil-A’s coleslaw. They no longer serve it, so they released their recipe. I’ve never made it before, but it seems easy enough. He also requested Texas Toast to make a sandwich with, but I’m gonna have mine on a potato. The hubs and kids can have their potato on the side if they want.
Paprika Chicken with Spinach and Rice
I like the sound of chicken in a buttery thyme sauce with spinach served over rice! This will be our Valentine’s Day meal. We stopped going out a looong time ago. I enjoy going out, just not on the same day everyone else wants to go out.
